Sonoma Chicken Salad Sandwich

This is a chicken and salad in one. How much more perfect can the dieters lunch get! This simple recipe has very easy and short preparation that makes a delicious meal. There are multiple facts about this sandwich that make it one of my favorites!

You can create multiple servings in one mix! Between the simple preparation and abundant quantities you can feed a whole pick nick worth of family and friends! Or strangers! We don’t judge.

The main direction for preparing this meal is mixing. Due to this we have a meal that can be prepackaged and sent with anyone on their way out the door! Bring some bread and this salad and you have a simple meal that you can have ready for any occasion.

Ingredients

  • 3 1/2 cups cooked, shredded chicken
  • 1 cup diced celery
  • 2/3 cup chopped pecans
  • 1/2 cup dried, chopped cranberries
  • 2 Tablespoons of finely grated Parmesan cheese

Dressing Ingredients

  • 1 Teaspoon of prepared yellow mustard (Not necessary but it is my favorite)
  • 1 Tablespoon of poppy seeds
  • 1/2 Teaspoon of onion powder
  • Salt and freshly ground black pepper to add great taste!
  • 2/3 cup of mayonnaise
  • 1/4 cup of apple juice
  • 3 Tablespoons of honey
  • 2 Teaspoons of apple cider vinegar

Directions

Grab the large mixing bowls for this one! Add in the shredded chicken, celery, dried cranberries, pecans and Parmesan cheese.

In a separate mixing bowl take each ingredient from the dressing list and whisk them all together until it is very well blended. Pour the finely blended dressing over the chicken mixture and toss well to create the chicken salad. Lather this across some sliced bread or even a croissant to have a delicious (albeit very buttery) delight!

This is my new favorite lunch to prepare. The sweetness of the chicken salad is greatly enhanced by the cranberries and poppy seeds. The easy prepare and take on the go nature makes this perfect for work, hikes, car trips and my favorite, pick nicks! I have yet to find a hater on this dish, which is rare.

A pro tip if preparing the night before instead of eating this as you make it, add to bread later. I tend to finish the chicken salad completely and then just throw it in some Tupperware with bread bagged up separately. That crisp artisan bread will just get soggy otherwise!
